Pork belly, seasoned with iodised salt, pepper or chilli pepper, is hand worked, massaged and rolled over itself. It is then tied and prepared in the intestine that protects it during maturation.

The spicy version flaunts an intense, bubbly experience. Also available wrapped in a black pepper cream.
